This is one of my favorite meals. It is gluten free and dairy free. This is a super simple Chili recipe that we make year round. It is delicious and cozy but also simple and provides many meals for leftovers. I also love feeding this to the babies because I know that it is healthy and hearty!
Ingredients
- Ground Turkey
- Black Beans (2 cans)
- Pinto Beans (1 cans)
- Diced Tomatoes with Green Chilis-Rotel (1 can)
- I onion chopped
- Seasoning (I don’t measure just throw in and taste it)
- Garlic powder (estimated 1.5 tbs)
- Onion powder (est. 1 tbs)
- Adobo powder ( est 1 tbs)
- Black pepper (est 1.5 tbs)
- Pink Himalayan Salt (est 1 tsp)
- Cumin (est 1/2 tsp)
- Black Jalapeno Garlic powder (est 1 tsp)
- Red Pepper Flakes (est 1 tsp)
- Honey (1/2 tsp)
- Brown Sugar (1/2 tsp)
Steps
- Brown meat with a little salt and pepper
- Strain meat
- Leave in the same pot on the stove
- Add all of the seasonings while still cooking meat (on medium)
- Stir in all of the other ingredients (beans and tomatoes)
- Stir and let cook on medium-low for another 10 minutes
- Then turn it to low and continue to stir until your ready to serve
Serve over rice (yellow or white- we alternate), sour cream & shredded cheese with a side of the tostitos lime tortilla chips! I use dairy free cream cheese and cheese and the boys eat regular!
Also, note that if you’re looking to make it extra hearty and healthy you can add chopped carrots, canned green beans and broccoli to it ( adjust seasonings to taste). If I am not in a hurry or if I am cooking it in the crock pot ahead of time I will add in the extra veggies!
